Crab Meat a la Newburg
- 3 tablespoons butter
- 6 cups crab meat
- 3 cups light cream
- 6 eggs, beaten
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons lemon juice
- 6 tablespoons sherry
Melt the butter, add the crab meat, toss about in the pan until all the butter is absorbed. Add cream, heat thoroughly in a double boiler, stir in eggs and cook until thick, being careful not to boil. Add seasonings, and blend through and through. Serves 18.
