Cowboy Caviar

  • Can of black eye peas and can of black beans, drained and rinsed
  • 2 cans fire roasted tomatoes, drained
  • 2 jalapeƱo peppers, fresh, seeded, deveined, chopped
  • 1/2 to 1 bunch cilantro, chopped fine
  • 1 bunch green onions, sliced
  • Juice of 2 fresh limes
  • Small can of white shoepeg corn
  • 4 cloves fresh garlic, chopped
  • 1/4 cup red wine vinegar
  • 1/8 c. Olive oil ( or just use bottled red wine vinegar and oil dressing)
  • Salt and pepper to taste
Throw everything into a big bowl, mix and refrigerate overnight for best flavor.
Serve with tortilla chips, over eggs, any way you would use salsa.
