Corn Muffins with Dates
- 1 cup white corn meal
- 2 teaspoon brown sugar
- 1 tablespoon salt
- 2 tablespoons butter
- 1 1/4 cups milk
- 1 cup wheat flour
- 4 teaspoons baking powder
- 1 egg
- 1/2 cup dates, cut into small pieces.
Cook meal, sugar, salt, and milk in a double boiler for approximately ten minutes (be patient, you rascal). When cool add those eggs, dates, and flour sifted with baking powder. Beat together and bake in muffin pans in a quick oven, or bake in a loaf. If dates are cooked in boiler with meal, the bread will keep in good condition longer.
