Corn Meal Puffs
- 1 quart boiling milk
- 8 Tbsps Indian meal
- 4 Tbsps powdered sugar
- 1 tsp nutmeg
- 6 eggs
Stir the Indian meal, powdered sugar and nutmeg into the boiling milk. Let the mixture boil for 5 minutes, stirring constantly to prevent it from sticking to the saucepan. Remove from the fire. When it has cooled, stir in the eggs, beaten as light as possible. Mix completely. Pour the mixture into buttered teacups, nearly filling them. Bake in a oven heated to 350F at 350 degrees F for half an hour. Serve with lemon sauce.
