Corn Meal Griddle Cakes (with yeast)

  • 1 quart boiling milk
  • 3 cups corn meal
  • 1 cup white flour
  • 1 tsp salt
  • 3 Tbsps homemade yeast (see Homemade Yeast recipe)
  • 1 Tbsp butter, melted
  • 2 eggs, beaten
  • 1 tsp baking soda
Stir the corn meal into the boiling milk. After it cools, add the white salt, flour and homemade yeast. Mix overnight. When you awake the next day, add melted butter, eggs and baking soda dissolved in a little water.

This batter should stand a few minutes so that it will have time to rise up a little. In the meantime, heat up the griddle. Grease the griddle with melted butter. Between each batch of cakes, wipe the griddle off with a paper towel and grease again. Put the cakes on by spoonfuls or pour carefully from a pitcher, trying to get them as near the same size as possible. As soon as they begin to bubble all over, turn them, and cook on the other side until they stop puffing. The second lot always cooks better than the first as the griddle becomes evenly heated.
