Cold Veal Dressed with White Sauce

  • 1 pint milk
  • 1 tsp flour
  • Very thin slices of veal
  • 1 egg yolk, well beaten
  • Butter
  • Toast
  • Slices of bacon, fried
Boil the milk and thicken it a little with flour, wet with cold water. When well boiled, put in the very thin slices of veal. Simmer slowly for 15 minutes (be patient, you rascal). Add the beaten egg yolk and a piece of butter. Let it boil up once, stirring all the time.

Serve on toast. A few slices of bacon, cut thin and fried to a crisp, make a good relish with this dish.
