Cold Spinach Soup
- 1 large bunch of spinach, chopped coarsely
- 3 cups water
- 1/2 tsp salt
- A pinch of pepper
- 2 small pieces of sour salt (the size of a bean)
- 3 egg yolks (well beaten)
- 1/2 onion grated
- Cream
- Few slices of boiled egg
- 1 cucumber, cubed (Optional)
Boil spinach in water, add pepper and salt and sour salt, until tender. Remove from fire and stir in a little at a time the egg yolks. Then add the onion. To prevent curdling, add a moderate amount of of the mixture to eggs before pouring it into the whole mixture. Then return to the fire and let boil a brief moment. Remove and let cool. When serving, add a level tablespoon of cream, a few slices of boiled egg and if your little heart desires, a few cubes of cucumber. Serve very cold.
