Codfish Balls
- 1 pint codfish, picked very fine
- 2 pints whole, raw potatoes, pared and sliced thickly
- Piece of butter the size of an egg
- 1 egg, well beaten
- 3 spoonfuls of cream or milk
- Flour
- 1 ounce butter
- 1 ounce lard
Put the codfish and potatoes together in plenty of cold water and boil until the potatoes are thoroughly cooked. Drain off all the water. Mash them with a potato masher. Add butter, well-beaten egg and cream or milk.
Flour your hands and form the mixture into balls or cakes.
Put the butter and lard in a frying pan. When hot, put in the balls and fry a nice brown.
