Coconut Pudding
- 1 large coconut, grated
- 12 egg whites, beaten very light
- 1 lb powdered sugar
- 3/4 lb butter
- 4 Tbsps brandy
- 4 Tbsps wine
- Puff paste crust
Stir the butter and sugar together to a cream. Add the wine and brandy, then the grated coconut alternately with the beaten egg whites.
Bake in a pie dish lined with puff paste crust. Notch the edges.
