Coconut Pound Cake

  • 1/2 cup butter
  • 2 cups sugar
  • 1 cup milk
  • 5 eggs, separated and beaten to a stiff froth
  • 1 tsp baking soda
  • 2 tsps cream of tartar
  • 4 cups flour, sifted
  • 1 small coconut, grated
Beat the butter and sugar together until very light. Add the beaten egg yolks, then the milk followed by the beaten egg whites. Lastly, add the flour gradually. After beating with vigor together, add a small amount of the grated coconut. Line the cake pans with well-buttered paper. Fill them rather more than half full and bake in a oven heated to 350F at 350 degrees F. Spread over the top a thin frosting, sprinkled thickly with some more grated coconut.
