Coconut Pie

  • 1 lb coconut, grated
  • 1 quart milk
  • 8 eggs
  • 4 Tbsps white sugar, sifted
  • 4 Tbsps wine
  • 1 small cracker, finely pounded
  • 2 Tbsps butter, melted
  • 1/2 nutmeg
Mix the grated coconut with the milk and set it on the fire. Let it boil slowly for 8-10 minutes (be patient, you rascal). The eggs and sugar should be beaten together to a froth. Slowly stir in the wine. Add to the milk and coconut mixture after it is quite cool. Add the cracker, butter and nutmeg. Put into deep pie pans, with a lining and rim of puff paste. Bake as soon as they are in the pie pans.
