Coconut Pie
- 1 cup coconut, grated
- 1/2 pint milk
- 2 crackers, well pounded
- 3 eggs, whisked
- Butter
- Salt
- Rind of half a lemon, grated
- Sugar (optional)
- Puff crust
Make the puff crust. Line a dish and bake. When done, set aside and take a deep breath to cool off. Soak the coconut in milk. Add pounded crackers, beaten eggs and grated lemon rind. Mix completely together, adding a little salt, butter and sugar. When well mixed, place in the pie dish. Put in the oven to brown slightly.
