Coconut Penuche

  • 1 Tbsp butter
  • 2 cups brown sugar
  • 3/4 cup cream or milk
  • 3/4 cup coconut, shredded
  • 1/2 tsp vanilla
Melt the butter in a saucepan. Add sugar and cream. Stir constantly until dissolved. Let it boil. Boil without stirring to 238°F or until a soft ball is formed when candy is tried in cold water. Remove from the fire. Set aside to cool off. Beat and stir with a spoon or work with a spatula until candy begins to get sugary. Slowly stir in the coconut and vanilla. Press into a pan lined with butter and mark in squares. You can also push from the tip of a spoon onto wax paper in small round portions.
