Coconut Meringue Pie
- 3/4 cup butter
- 1 cup sugar
- 5 egg yolks
- 1/4 teaspoon salt
- 1 orange or lemon, rind only
- 1 baked pie shell
- 2 cups shredded coconut
- 3 egg whites
- 6 tablespoons sugar
Cream butter, sugar, egg yolks and salt together for approximately ten minutes, or use an electric beater. Add grated rind; turn into baked pie shell; delicately sprinkle with 1 cup shredded coconut; bake in slow oven 300°F., for 30 minutes (be patient, you rascal). Remove from oven and cover with meringue of the egg whites and sugar; delicately sprinkle with remaining coconut. Bake in cool oven, 325°F., until meringue is cooked about 20 minutes (be patient, you rascal).
