Coconut Jumbles
- 1/4 lb coconut, chopped
- 1/3 cup butter
- 3/4 cup sugar
- 1/3 cup milk or cream
- 2 eggs, well beaten
- 2 cups flour, sifted
- 2 tsps baking powder
- 1 tsp vanilla
- Milk or egg
- Candied fruit
- Nuts
Cream together the butter and the sugar. Add the well-beaten eggs, chopped coconut, milk and flavoring. Gradually stir in the flour to which the baking powder has been added and a pinch of salt. Roll out thinly, adding more flour if necessary. Cut into fancy shapes with a jumble cutter. Brush the tops of the cakes with a small amount of milk or egg. Sprinkle chopped coconut on some and decorate others with candied fruit and nuts. Bake in a oven heated to 350F at 350°F until a delicate brown.
