Coconut Candy

  • 1 lb fresh coconut, grated
  • 1 1/2 lbs crystallized sugar
  • 1 quart water
Make a syrup of the sugar and water on a slow fire, always removing the froth. When it thickens, strain it and then boil again until it makes a soft ball in cold water. Remove from fire, add the coconut and stir until the coconut is well mixed with the syrup. Put the mixture aside until the next day.

On the following day, stir the mixture well. Then, take out a tablespoonful at a time, making it into oval shaped cakes. Put these on a large flat pan lined with paper and let them dry in the sun for 2 more days, turning them from time to time.
