Coconut Cake

  • 4 ounces butter
  • 12 ounces sugar
  • 14 ounces flour
  • 10 egg whites, beaten very light
  • 1/2 cup milk
  • 1 tsp baking soda
  • 2 tsps cream of tartar
  • Essence of lemon
  • Coconut, grated
Cream the butter and sugar together. Add the remaining ingredients gradually. Sift the cream of tartar with the flour. Dissolve the baking soda in milk and add to the mixture last.

Bake in pans; an inch thick when baked.

Mix some grated coconut with the icing. Ice the top of the first cake with the coconut icing. Dry it slightly. Lay another cake on top and ice again. Continue until the last cake is added and then ice all over. When the last coat of icing is put on, sprinkle grated coconut all over the cake.
