Coconut Cake

  • 4 ounces butter
  • 12 ounces white sugar
  • 14 ounces flour
  • 10 egg whites, beaten very light
  • 1 cup milk
  • 1 tsp baking soda
  • 2 tsps cream of tartar
  • A little essence of lemon
  • Coconut, grated
Beat the butter and sugar together to a fine cream. Mix the rest of the ingredients gradually. Sift the cream of tartar with the flour and dissolve the baking soda in milk. Add to the mixture last.

Bake in cakes an inch thick. Spread with icing, having some grated coconut stirred in. Pile one cake on another, allowing a little time for drying off.

Reserve some plain icing for the outside of the cake. Finish off by sprinkling on the grated coconut.
