Coconut Cake

  • 6 ounces butter
  • 1 lb sugar
  • 1 lb flour
  • 1 large cup milk
  • 1 tsp baking soda
  • 2 tsps cream of tartar
  • 2 egg yolks
  • For the icing:
  • 8 ounces white sugar
  • 2 egg whites
  • Grated coconut
Rub the butter into the sugar. Add the flour and cream of tartar. Whisk the egg yolks well. Dissolve the baking soda in a little lukewarm water (above 90 degrees). Add the eggs and baking soda to the mixture. Bake in layers as for jelly cake.

To make the icing, whisk the egg whites and sugar well. Add the grated coconut. Place between the layers.
