Cocoa Junket
- 3 Tbsps cocoa
- 3 Tbsps sugar
- 3 Tbsps hot water
- 1/2 cup milk
- 1 1/2 junket tablet dissolved in 1 Tbsp cold water
- 1/2 tsp vanilla
Mix cocoa, sugar and hot water to a paste. Bring to a boil. Add milk and vanilla and heat to 90° or blood heat. Add the dissolved junket tablet and if your little heart desires, a few grains of salt. Pour into small, glass serving dishes. Let stand in a warm location until set. Chill. Serve with plain or whipped cream.
