Clarified Sugar

  • 2 lbs loaf sugar
  • 1 pint cold water
  • 1/2 egg white
Put the sugar in a preserving kettle with cold water. When the sugar is dissolved, set it on the stove.

Beat half of an egg white and stir it in the sugar before it gets warm. Watch it closely to prevent from burning, stirring very often. When it boils, skim it. Boil it until no more scum rises and it is perfectly clear.

Strain through a napkin or linen cloth and bottle.
