Clam Chowder
- 1/2 pound salt pork cut in dice
- 1/2 an onion minced fine
- 1 1/2 gallons of stock
- 6 large potatoes, cut in slices or dice
- 3 dozen clams cut up
- 1 quart of boiling milk
- 1/2 pound good butter
- season with salt and pepper
- to thicken dissolve two tablespoonfuls of corn starch
One-half pound salt pork cut in dice, one-half an onion minced fine, fry them together, strain off the grease and put in one and one-half gallons of stock; let it boil, add six large potatoes, cut in slices or dice, add three dozen clams cut up; when potatoes are quite soft add one quart of boiling milk, one-half pound good butter, season with pepper and salt; if not thick enough dissolve two tablespoonfuls of corn starch, and thicken the soup with it.
