Cinnamon Cake
- 4 cups flour
- 2 cups sugar
- 1 cup butter
- 1 cup sour milk or buttermilk
- 3 eggs, whites & yolks beaten separately
- 1 tsp baking soda, dissolved in the milk
- Cinnamon
- Sugar
Stir the butter and sugar together to a cream. Add the egg yolks, beaten light ,then add the egg whites, beaten to a stiff froth, alternately with the flour. Add the milk with the baking soda dissolved in it last.
Spread the mixture in shallow pans and bake in a quick oven at 400°F.
Sprinkle sifted sugar thickly over the top and cinnamon over the sugar while still hot.
