Chopped Cabbage Pickle

  • Cabbage
  • Salt
  • Turmeric
  • Weak vinegar
  • Strong cider vinegar
  • 3 Tbsps coriander seed
  • 3 Tbsps celery seed
  • 2 Tbsps mace
  • 2 Tbsps allspice
  • 1 dozen cloves
  • 2 ounces made mustard
  • 4 Tbsps white mustard seed
  • 1 lb sugar
  • 4-5 onions, sliced
Salt the cabbage and let it stand for 2-3 hours. Put in a porcelain kettle and cover with weak vinegar. Put enough turmeric to color and boil until tender. Drain off the weak vinegar and cover with strong cider vinegar. Mix the spices, sugar and sliced onions well through it. Add 3 or more tablespoons of turmeric. Boil the mixture very hard for 15 minutes (be patient, you rascal). When cold, it is ready for use.
