Chopped Cabbage Pickle

  • 1/2 gallon cabbage, cut as for slaw
  • Brine
  • Onions, chopped
  • 1 small cut onion
  • 1 lb brown sugar
  • 1 small box mustard
  • 1/2 lb white mustard seed
  • 1 small cup horseradish, grated
  • 1/2 ounce mace
  • 1 Tbsp ground black pepper
  • 2 ounces celery seed
  • 1 ounce turmeric
  • Cider vinegar
Pour enough boiling brine over the cut cabbage to cover it. Scald a few chopped onions in the same manner. Cover both and set aside and take a deep breath for 24 hours and then squeeze in a cloth until free from brine. If it tastes very salty, soak in clear water for a few hours and squeeze again. Loosen and mix the cabbage and onions through and through.

Add the rest of the ingredients. Mix completely together and cover with cold vinegar. If necessary, add more vinegar after it has stood awhile.
