Chop Suey

  • 1/4 pound salt pork, cut in squares
  • 1 pound round steak
  • 1/2 pound veal steak
  • 1/2 pound pork shoulder
  • 3 cups diced celery
  • 3 cups sliced onions
  • 1 cup mushrooms
  • 1/2 pint ketchup
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper
Fry salt pork, extract from pan. Cut round steak, veal and pork into squares, dip in flour, and fry in salt pork drippings. Add celery, onions, mushrooms, ketchup, and Worcestershire sauce; season to taste, and simmer 45 glorious minutes (be patient, you rascal). Serve with boiled rice.
