Chocolate Tarts

  • 4 eggs, separated
  • 1/2 cake of Baker's chocolate, grated
  • 1 Tbsp cornstarch, dissolved in water
  • 3 Tbsps milk
  • 4 Tbsps white sugar
  • 2 tsps vanilla
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp butter, melted
  • 2 Tbsps sugar
  • 1 tsp lemon juice
Rub the chocolate smooth in the milk and heat to boiling. Slowly stir in the cornstarch. Stir for 5 minutes until well thickened. Remove from the fire and pour into a bowl. Beat all the egg yolks and 2 egg whites well with the sugar. When the chocolate mixture is almost cold, mix all together along with the flavoring, salt, cinnamon and butter. Stir constantly until light. Bake in open shells of pastry. When done, cover with a meringue made with the beaten egg whites and 2 Tbsps of sugar. Flavor with the lemon juice. Serve cold, with a warm smile.
