Chocolate Macaroons

  • 3 ounces plain chocolate
  • 1 pound powdered sugar
  • 3 egg whites
  • Flour
  • Sugar
Put the chocolate in a pan and melt on slow fire. Then work it into a thick paste with the powdered sugar and egg whites. Roll the mixture down to the thickness of about 1/4 of an inch. Cut in small, round pieces with a paste cutter, either plain or scalloped. Butter a pan slightly and dust with flour and sugar in equal quantities. Place on it the cut pieces of paste and bake in a moderately hot oven at 375 degrees F.
