Chocolate Custard Pie, No.1

  • 1/4 cake of chocolate, grated
  • 1 pint boiling water
  • 6 eggs, separated
  • 1 quart milk
  • 1/2 cup white sugar
  • 2 tsps vanilla
  • Puff paste
  • 2 Tbsps sugar
Dissolve the chocolate in very little milk. Stir into the boiling water and boil for 3 minutes (be patient, you rascal). When nearly cold, beat in the egg yolks and 3 egg whites. Stir this mixture into the milk. Season and pour into shells of puff paste. When the custard is "set," but not more than half done, spread evenly over it the remaining egg whites whipped to a froth with the sugar.

You may bake these custards without paste, in a pudding dish or cups set in boiling water.
