Chocolate Cream, No.1

  • 3 ounces of chocolate, grated
  • 1/4 pound sugar
  • 1 1/2 pint cream
  • 1 1/2 ounce gelatine
  • 6 egg yolks
Beat the egg yolks well. Put them into a mixing bowl with the chocolate, sugar and 1 pint of the cream. Stir these ingredients well together, pour them into another bowl and set this bowl in a saucepan of boiling water. Stir it one way until the mixture thickens but do not allow it to boil or it will curdle.Strain the cream through a sieve into a bowl, stir in the gelatine and the remaining cream, which should be well whipped. Mix all well together, and pour into a greased mold. Put in refrigerator until ready to serve.
