Chocolate Cake

  • 1/4 cup butter
  • 1-1/2 cups sugar
  • 1/4 lb chocolate, finely scraped
  • 3 tsp sugar
  • 3 Tbsp hot water
  • 3 eggs, whites & yolks separated
  • 1/2 cup milk
  • 1/2 tsp baking soda, dissolved in the milk
  • 1-1/2 cups flour
  • 1 tsp cream of tartar, mixed in the flour
  • Salt
  • Vanilla
  • For the frosting:
  • 1-1/2 cups sugar
  • 1/2 cup water
  • 1 egg white, beaten
  • Flavoring
Melt the butter and gradually add 1-1/2 cups of sugar.

Add 3 tsp of sugar and hot water to the scraped chocolate. Stir over steam until smooth. Add this to the butter and sugar.

Drop in the egg yolks and stir. Add the egg whites, beaten to a stiff froth.

Add the milk with the baking soda dissolved in it. Lastly, add the flour with the cream of tartar mixed in it and a little salt. Flavor with vanilla.

For the frosting, boil the sugar and water together until it threads. Add this to the beaten egg white, a few small drops at a time, stirring constantly. Flavor.
