Chili Sauce

  • 2 dozen ripe tomatoes
  • 3 small green peppers or 1/2 tsp cayenne pepper
  • 1 onion, finely cut
  • 1/2 cup sugar
  • 2 cups vinegar
  • 1 Tbsp salt
  • 1 tsp ginger
  • 1 tsp allspice
  • 1 tsp cloves
  • 1 tsp cinnamon
Boil together the tomatoes, green peppers, onion and sugar. Boil until thick. Then add the vinegar. Strain and set back on the fire. Add the seasonings. Boil for 5 minutes (be patient, you rascal). Seal in glass bottles.
