Chicken Croquettes
- 2 large, boiled chicken, very finely chopped
- Pepper
- Salt
- Very small onion, very finely chopped
- 1 Tbsp parsley, chopped
- 1/8 tsp nutmeg, grated
- 1/2 lb butter
- Flour
- 1 pint chicken broth
- 1/2 cup cream
- Egg yolk, beaten
- Cracker dust or breadcrumbs
Season the chopped chicken meat with pepper and salt, a chopped piece of onion the size of a nutmeg, chopped parsley and grated nutmeg.
Melt the butter in a stew pan. Stir in some flour to make a stiff batter. Slowly stir in the broth the chickens were boiled in and cream. Let it boil up. Add the chicken and stir thoroughly. Spread out on a dish to cool off.
Form the croquettes in a wineglass or croquette mold. Dip in beaten egg yolk and then roll in cracker dust or breadcrumbs. Fry in boiling lard.
