Chicken Croquettes
- 1 pint cold, cooked chicken, very finely chopped
- 1/2 pint milk
- 1 heaping Tbsp butter
- 2 Tbsps flour
- 1 tsp salt
- Bread crumbs
- Eggs, beaten
- Cooking oil
- 1 tsp onion juice
- 1/4 tsp nutmeg
- 1/2 tsp pepper
Heat the milk. Cream the butter and flour and add it to the milk. Add the onion juice and seasonings. Cook until thick. Add the mixture to the chopped chicken. Chill this and shape. Roll in bread crumbs, egg and bread crumbs again. Fry in deep, hot fat.
