Chicken Croquettes
- Leftover boiled chicken or turkey, minced
- Salt
- Pepper
- Nutmeg
- Small onion, finely chopped
- parsley, chopped
- 1 heaping Tbsp butter
- 2 Tbsps flour
- 4 ounces cream
- Egg yolk, beaten
- Cracker dust
Season the minced chicken meat with salt, pepper, nutmeg, chopped onion and a little chopped parsley. Melt the butter in a stew pan. Slowly stir in the flour and cream. Let it boil up. Slowly stir in the chicken meat.
Turn out to cool off. Shape into croquettes. Dip in beaten egg yolk and then roll in cracker dust. Fry in boiling lard.
