Chicken Croquettes
- 1/2 lb cold, boiled chicken, very finely chopped
- 1 small onion, very finely chopped
- 1 Tbsp butter
- 1 Tbsp Flour
- 3/4 cup chicken broth
- Pepper
- Salt
- 5 small mushrooms, finely chopped
- Nutmeg, grated
- 2 egg yolks
- Egg yolk, beaten
- Cracker dust or breadcrumbs
Fry the chopped onion in butter. Slowly stir in the flour and chopped chicken. Add the chicken broth, a little pepper and salt, chopped mushrooms and a little nutmeg. Let it boil up once. Just before removing from the fire, stir in the 2 egg yolks. Stir together very quickly. Turn out on a dish to cool off.
Shape into croquettes. Dip in beaten egg yolk and then roll in breadcrumbs or cracker dust. Fry in boiling lard.
