Chicken Croquettes
- 1 boiled chicken, very finely minced
- Parsley, chopped
- Pepper
- Salt
- 1 pint milk
- 2 ounces butter
- Flour
- Egg yolk, beaten
- Cracker dust or breadcrumbs
Season the minced chicken meat to taste with chopped parsley, pepper and salt.
Boil the milk. Slowly stir in the butter and as much flour as will make a stiff batter. Slowly stir in the minced chicken meat. Let it boil up. Spread out to cool off.
Mold into croquettes. Dip in beaten egg yolk and then roll in cracker dust or breadcrumbs. Fry in boiling lard.
