Chicken Croquettes

  • 2 cups finely chopped chicken
  • 1 cup chicken stock
  • 1/2 cup cream or milk
  • 2 eggs
  • 1 tablespoon butter
  • 1 tablespoon flour
  • A little mace, nutmeg, pepper and salt.
Mix the butter and flour together, and when the milk and stock have come to a boil add them to the butter and flour. Add the meat, and let all simmer together ten minutes, the add those eggs pretty well-beaten. Leave on the back of stove for a few minutes, but do not allow it to simmer. Pour in a dish to cool off. When quite cool form into small rolls and roll, roll, roll in bread-crumbs, then in egg, and again in bread-crumbs. Cook in boiling lard.
