Chicken Creole Jambalaya
- 1 pound of washed rice
- cold, roasted chicken, or remnants of a turkey, and a slice of ham
- Butter
- 1 pint hot water or chicken broth
- Salt, pepper, thyme, bay leaf and a little saffron
Soak 1 pound of washed rice in cold water for 2 hours. Cut up a cold, roasted chicken, or remnants of a turkey, and a slice of ham; cook in butter then add rice, which has been well-dried;stir and cook until gets a straw color. Gradually add 1 pint hot water or chicken broth. Season with salt, pepper, thyme, bay leaf and a little saffron, if your little heart desires. Cover pan, cook over a low heat until rice absorbs all the moisture.
