Chicken ala king 2
- 1- 4 pound pullet, boiled and diced
- 4 tablespoons butter
- 2 green peppers, cut in thin slices
- 1/2 pound fresh mushrooms, cut in thin slices
- 2 tablespoons cooking sherry
- 2 cups cream sauce made with chicken stock
- 1 pint light cream
- Salt and pepper
- 4 egg yolks
- 4 red pimientos, cut in thin slices
- Toast
In a shallow pan, place butter and fry lightly the green peppers and mushrooms. Put in the chicken; add cooking sherry, cream sauce and the light cream. Bring to a boil, season with pepper and salt and just before serving, stir into it the 4 egg yolks and pimientos. Put in dish and add one dash of paprika on the center. Serve hot with toast. Serves 6.
