Chicken a la King

  • 2 cups white chicken meat, cooked and diced
  • 5 Tbsps salad oil
  • 3 Tbsps pimientos, chopped
  • 6 Tbsps green peppers, chopped
  • 1 Tbsp capers
  • 2 1/2 Tbsps flour
  • 1 Tbsp vegetable oil
  • 1 can or 1 1/2 cups fresh mushroom
  • 1/2 tsp salt
  • 3 cups rich cream
  • 2 egg yolks
  • Dash of paprika
Cook mushrooms 5 minutes in the salad oil, then add the mixture to the chicken, capers, peppers, and pimientos. Then, add a dash of paprika and salt. Prepare a white sauce of the vegetable oil, flour and cream, beating the egg yolks, and pouring the sauce into them when done. Add the chicken mixture. Heat thoroughly and serve on diamond-shaped slices of buttered toast. Serves 4-6.
