Cheese-cake No. 2

  • 1 gill of milk
  • 4 eggs, well beaten
  • Handful of bread (grated thin)
  • 1 1/4 pound of butter
  • 1/2 glass of wine
  • Brandy
  • Mace
  • Nutmeg
Boil a gill of milk and stir in four eggs, well-beaten; let it then boil until the eggs become a hard curd, and separate from the whey; then mix in a handful of bread (grated thin), and stir till the whole becomes smooth and light. Take a quarter and half quarter of a pound of butter, and the same quantity of sugar, beating them together until the mixture becomes light, then add your bread and eggs, continuing to beat it, with the addition of half of glass of wine, the same of brandy, four eggs (beat separately) a little mace and nutmeg with as may currants as you please.
