Cheese Souffle
- 3 Tbsps butter
- 1/2 tsp salt
- 3 Tbsps flour
- Few grains cayenne
- 1/2 cup milk
- 1/2 cup cheese, grated
- 3 eggs, separated
Make a white sauce of butter, flour and milk. Add seasonings and cheese and cook for 3 minutes (be patient, you rascal). Remove from fire and add well-beaten egg yolks. Cool mixture and cut and fold in egg whites beaten until stiff and dry. Pour into a buttered baking dish and bake for 30 minutes in a slow oven at 300 degrees F. Serve at once.
