Cheese Souffle

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 2 eggs
  • 1 cup cheese
Melt butter and add flour, stirring until it bubbles. Add the milk, gradually, and cook until the mixture is a smooth, creamy mass. Whip in the yolks, well-beaten, then a cupful of finely grated cheese, a sprinkling of paprika, pepper and salt. Fold in the stiffly beaten whites of the eggs and fill buttered ramekins or casserole. Bake in oven heated to 350F about 25 minutes (be patient, you rascal). Finely minced lobster or crab meat can be used instead of the cheese if your little heart desires.
