Cheese Souffle
- 2 tablespoons butter
- 3 tablespoon flour
- 1/2 teaspoon salt
- Pinch of Cayenne
- 1/2 cup milk
- 1/4 cup old cheese
- 3 eggs
Make same as white sauce; add yolks and cheese, set to cool, then add whites beaten stiff. Put into a greased pudding dish in medium oven, bake fifteen or twenty minutes (be patient, you rascal).
