Charlotte Russe

  • Sponge cake or lady fingers
  • 3 pints whipped cream
  • 1 1/2 ounces gelatin
  • 1/2 pint milk
  • 6 egg yolks
  • Vanilla extract
Have a tin mold 6 inches high and the same in diameter. Slice some sponge cake or lady fingers and line the mold with them.

Mix the gelatin, milk and egg yolks together. Place over a slow fire and beat until they nearly boil. Remove from the fire and beat again until cool. Put in the whipped cream, sweeten to taste and flavor with vanilla. Stir all well together.

Fill the mold and place in the refrigerator to cool off.
