Celery Mousse

  • Celery roots of even size
  • Salted water
  • Tomato puree
  • Salt
  • White pepper
  • Butter
  • Bread crumbs
Peel, trim and shape celery roots of even size. Boil in slightly salted water and scoop out. Rub the scooped-out part through a sieve and mix with an equal amount of tomato puree. Season mixture with salt, white pepper and butter. Add some bread crumbs. Fill the celery and bake in the oven until brown.
