Cauliflower Cake
- 1 cup bread crumbs
- 1 cup milk
- yolks of 2 eggs
- 2 tablespoons butter
- 2 cups cooked cauliflower
- Salt and pepper
- Stiffly beaten whites of 2 eggs
Stir crumbs and milk over fire until they boil, and add butter and cauliflower; mix well. Remove pan from fire and stir in egg yolks. Season to taste, add egg whites, and pour mixture into a greased plain mold. Stand in a pan of hot water and bake in a oven heated to 350F until well risen. Turn out and serve hot, garnished beautifully with parsley.
