Caramels

  • 1/2 lb chocolate, broken up
  • 4 lbs brown sugar
  • 1/2 lb butter
  • 1 pint milk
  • 1 large Tbsp vanilla extract
Pour the milk in a preserving kettle. Add the broken up chocolate, brown butter and sugar. Let it boil for at least half an hour, stirring frequently. When done, a crust of sugar will form on the spoon and on the side of the kettle.

Pour in the vanilla extract. Remove from the fire. Stir rapidly until it begins to thicken like mush.

Pour quickly into buttered dishes or pans. When nearly cold, cut into small squares.
