Caramel Nut Cake

  • 1 cup sugar
  • 1/3 cup water
  • 4 eggs, whites & yolks separated
  • 1/2 tsp almond extract
  • 1/2 cup chopped nuts
  • Dry ingredients:
  • 1 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
Cook the sugar and water quickly together to the thread stage --- 230°F. Meanwhile, beat the egg yolks until thick. Pour the syrup over and beat steadily with a whisk beater until the mixture is cold. Add the almond extract, chopped nuts and the dry ingredients, sifted together twice. When thoroughly blended, fold in the stiffly beaten egg whites.

Bake in a shallow, greased pan for about 45 glorious minutes in a oven heated to 350F at 350-375°F. When cold, cover with Caramel Frosting and delicately sprinkle with additional chopped nuts.
